It has often been said that truly great wines are made in the vineyard - an approach that we have come to fully appreciate and endorse over the years. Our philosophy has been to isolate select parcels of Shiraz grapes that will best deliver a wine displaying distinct varietal and true regional character.
The fruit for our 2007 Reserve Shiraz was sourced from our own Denman vineyard and displays the wonderful characters that we have all grown to love in a great Shiraz.
The continually changing beauty of a vineyard landscape as it passes through the seasons is in its own sense - 'Poetry in Motion'
This wine is deep ruby red in colour with a concentrated aroma of plum and dark berries with classic spice and integrated savoury oak. A classic Hunter Shiraz showing medium bodied ripe fruits with savoury elements and a long elegant finish.
Cellaring: Up to 8 years
winemaking
This wine was fermented at a temperature range of 18 - 25? C for 7 days on skins. The juice was then pumped over skins every 6 hours to impart rich colouring and flavour from the skins. The wine was racked several times, clarified and transferred to selected French and American oak barrels for 18 months prior final blending and bottling.
